Ingredients Needed:
- 500g tenderstem broccoli, cut into 4 inch pieces and cut into half if thick
- 3 tbsp extra virgin olive oil
- 3 garlic cloves, finely sliced
- 3 cm piece of ginger, peeled and thinly sliced
- 1 orange, 4 strips of finely shaved skin
- 40 g salted roasted peanuts, roughly chopped
- ½ tsp rock salt
- ¼ tsp finely ground peppe
Method:
- Take a heavy based saucepan and keep on a medium heat. When it is a little hot, add half of the olive oil to it and at the same time, add garlic, ginger and orange stripes and fry for 2 to 3 minutes stirring frequently, until peanuts and garlic are a light golden brown. Transfer it to a small bowl to stop them from cooking and keep aside.
- Take a steamer and add water. As soon as the water starts boiling, add broccoli pieces to the top pan and let it boil for 4 to 5 minutes until cooked. Transfer the cooked broccoli to a serving plate and keep aside.
- Keep the same saucepan on medium fire which was used for the peanuts. Add the remaining oil as soon as vapor starts appearing, add the broccoli pieces and stir it continuously for a minute turning softly. Add salt and pepper and transfer to a serving plate. Sprinkle the mixture of peanuts on top. The dish is ready to be eaten.
- This can be served as a side.
