Ingredients Needed:
- 250 g halloumi pack
- 6 tbsp extra virgin olive oil
- 2 cloves of garlic, cut into small pieces
- Few sprigs of parsley, cut coarsely
- Few sprigs of mint
- 1 large cucumber
- 150 g of radishes
- 1 large avocado
- Juice of two lemons
- 1 green chilly, deseeded and thinly sliced ( optional)
- 4 spring onions thinly sliced
- Flaky rock salt
- Black pepper ground
Method:
- Dice the halloumi into 2 cm cubes and place these on kitchen paper.
- Take a heavy based pan and keep it on medium heat. Add two tbsp of oil to the pan and as soon as it gets hot, add the halloumi pieces. Go on turning these upside down until these become golden brown. Remove from heat. Add garlic and toss it nicely so that these pieces are nicely coated. Sprinkle pepper and add half of the chopped parsley and mint.
- Cut the cucumber into 2 cm pieces and cut the radishes into small pieces and place them in a large bowl. Dice the avocado and add it to the cucumber and radish pieces. Add lemon juice and salt. Add chili, spring onions and remaining herbs and mix well.
- Pour over the remaining olive oil and transfer to a large serving plate, top with fried halloumi cheese. This dish should be served while the cheese is still warm.
