Ingredients Needed:
- 2 big sweet potatoes, boiled, peeled and cut into small cubes
- 200 g boiled chickpeas (half of 400 gram can)
- 200 g spinach leaves, cut into stips
- 50 g pomegranate seeds
- 3 tbsp of extra virgin olive oil
- ¼ tsp of rock salt
- ¼ tsp of pepper
- 1 tbsp flaxseed and walnut milled
Method:
- Take a medium size bowl. Add sweet potatoes and chickpeas and add salt, pepper and oil and mix these properly and keep aside.
- Take a small bowl and add spinach strips and coat with oil. Add to the sweet potato mixture.
- Sprinkle with flaxseed and walnut milled and pomegranate seeds.
Dish is ready to serve.
