Course: Salty Snacks

Serves: 4 to 6
Ingredients:
- ½ cup of ground rice flour
- ¼ cup of besan ( gram flour)
- ¼ cup of sorghum or millet flour
- 1 cup of yogurt
- 1 carat, grated
- 1 courgette, grated (any other vegetable such as gourd or cabbage can be substituted if preferred)
- ½ cup of peas
- ½ tsp of thinly cut pieces of unwaxed lemon
- 1 tbsp of finely grated ginger
- 1 green chilli (optional)
- ¼ tsp of red flake chilli ( optional)
- ¾ tsp of turmeric powder
- 1 and half tsp of rock salt
- 1 tablespoon lemon juice
- 1 tbsp of ghee (any other oil can be substituted)
- 3 tbsp of sesame seeds
- ¾ ts of Eno powder
- Little warm water if required
Method:
- Preheat the oven at 220C fan oven.
- Add all the items in a bowl except sesame seeds and Eno powder. Mix these completely. The mixture should be of the consistency of yogurt. In case, the mixture seems thick, little water can be added.
- Take a steel plate having one to one and half inches sides or can use a baking tray and grease it with ghee.
- Sprinkle sesame seeds on the plate.
- Add eno salt to the mixture and mix it completely and pour it on the plate immediately and sprinkle sesame seeds on the top.
- Put in the preheated oven for 40 minutes or until the sides become golden brown.
- Let it cool down for 15 to 20 minutes.
- The pieces can be cut into 2 inches pieces or as preferred.
Special note:
- Handwa can be eaten with green, yogurt or Imli chutney
- Handwa can be eaten as a snack or light lunch
