Dry ingredients:
- 350 g almond flour
- *70 g sugar*
- ¼ tsp sea salt
- 2 tsp baking powder
- 25g hazelnut, broken into pieces (optional)
Wet ingredients:
- 70 g butter, measured solid, then melted, can use ghee or coconut oil for dairy free
- 2 large eggs
Method:
- Preheat the oven to 180°C /350°F.
- Line a baking tray with parchment paper
- Mix dry ingredients together in a large bowl. Stir in wet ingredients. Make into a dough.
- Scoop tablespoons of the dough onto the lined baking sheet ( a cookie scoop is the fastest way). If it does not work well, small rounds can be made with your hands. Little butter or ghee is required to put on your palm, and rounds can be made. These can then be flattened slightly with your fingers to form into biscuit shapes.
- Bake for about 15 minutes, until firm and golden. Cool on the baking sheet.
Special note:
- These biscuits are favorites of grand parents for their grandchildren.
* Instead of sugar, try using xylitol, a natural alternative to sugar that contains far fewer calories than sugar, and thus can have great benefits for those concerned about blood sugar levels. Moreover, the glycemic index (GI) of xylitol is much less than it is for sugar.
