Ingredients:
- 400 ml coconut milk
- 45 g chia seeds
- 1 tbsp sugar *
- ½ vanilla extract
- Some additional coconut milk for serving
- Some fresh or frozen berries for serving
Method:
- Add coconut milk, chia seeds, sugar and vanilla extract in a bowl or in a jar and combine these nicely. Coconut milk should be mixed nicely so that no lumps are left.
- Cover it and keep in the fridge overnight or for at least for 4 hours.
- Serve the pudding with some additional coconut milk and berries.
Special note:
- This is a quick, easy recipe and delicious recipe.
- To give a different flavor to this pudding, cinnamon, cardamom or unsweetened cocoa powder can be added.
* Instead of sugar, try using xylitol, a natural alternative to sugar that contains far fewer calories than sugar, and thus can have great benefits for those concerned about blood sugar levels. Moreover, the glycemic index (GI) of xylitol is much less than it is for sugar
