Ingredients:
- 500 ml full fat whole milk
- ¼ tsp cardamom powder
- 100 g paneer, grated
- 1 tbsp milk powder
- 30g sugar*
- 1 tbsp almond powder
- ½ tbsp flaxseed powder
- 2 tbsp flaked almonds, roasted
- 1 tbsp pistachios, chopped or sliced
- 5 to 6 strands of saffron (optional)
Method:
- Take a wide bottomed heavy pan, add milk and keep it on medium heat . Bring the milk to boil. As soon as it starts boiling, add cardamom powder and let it boil for 3 to 5 minutes reducing the heat to low.
- Add paneer and milk powder to the milk and mix these nicely and bring it to boil. As soon as it starts boiling, reduce the heat to low and leave it on the heat for another 5 minutes. This needs to be stirred a couple of times to avoid sticking to the base.
- Add sugar, almond powder and flax seed powder and leave it on heat for another 5 minutes.
- Garnish the kheer with flaked almonds and pistachios and at the end add a few strands of saffron.
- Saffron strands should be mixed with one to 2 tbsp of milk. Then added at the same time when adding nuts and sugar.
Special note:
- Kheer can be eaten hot, warm or chilled.
- This is a quick, easy recipe and delicious recipe.
* Instead of sugar, try using xylitol, a natural alternative to sugar that contains far fewer calories than sugar, and thus can have great benefits for those concerned about blood sugar levels. Moreover, the glycemic index (GI) of xylitol is much less than it is for sugar.
