ingredients:
- 100 g coconut flour/3/4 cup
- 1 ½ tsp baking powder
- ¼ tsp sea salt
- 6 tbsps butter
- 12 tbsps coconut oil/1/3 cup
- *1 tbsp sugar*
- 4 large eggs
- 1 tbsp almond milk
- 1 tbsp vanilla extract
Method:
- Preheat the oven to 190C/375° F.
- Line a baking tray with parchment paper
- Stir together coconut flour, baking salt and salt in a large bowl.
- In a separate bowl, beat butter and coconut oil together. Add xylitol and beat until fluffy.
- Add eggs, almond milk and vanilla and beat nicely.
- Add dry ingredients to the wet mixture, beating until mixed nicely. Batter should be thick. If not, add in a bit more coconut flour. Be careful not to overdo it.
- Scoop tablespoons of dough onto the baking sheet and flatten out to desired thickness.
- Bake for 8-10 minutes or until edges start to brown
