ingredients:
- 114 g unsalted butter, softened at room temperature
- 75 g sugar*
- 85 g light brown sugar
- 205 g unsweetened peanut butter chunky ( creamy can be used if preferred)
- 1 egg
- 125 g millet flour ( all purpose flour can be used if preferred)
- ¼ tsp rock salt
- Flaky sea salt and coarse sugar for sprinkling
Method:
- Preheat the oven to 180 C/350 degrees F. Line a baking tray with parchment paper or non stick liners.
- In a big bowl, add butter and sugars and mix with an electric mixer until smooth and fluffy, for at least 3 minutes. Add the peanut butter and egg and mix again.
- Add the flour and salt and mix until well combined. No white flour should be seen.
- Take a big oven tray and spread the baking sheet on it.
- Take 1 tablespoon of dough and make a round in the palm of the hand and keep it on to the sheet. Go on making others and go on putting in the same tray.
- These countries should be flattened with the tip of the finger. These roundies will not spread much or change shape, so these can be placed quite close together, leaving little room between them.
- In a small bowl, mix 1 tbsp of sugar and ¼ tbsp of salt. Sprinkle each roundie lightly with this mixture.
- Bake for 12 to 15 minutes until the color of these changes to golden brown. Carefully lift or slide off baking sheets and cool on racks or this can be moved a little softly and left on the sheet for some time.
- Store in layers separated by parchment paper, in airtight containers.
Special note:
- I use millet flour instead of all purpose flour as it is diabetic friendly.
- These biscuits are favorites of grandparents and their grandchildren.
* Instead of sugar, try using xylitol, a natural alternative to sugar that contains far fewer calories than sugar, and thus can have great benefits for those concerned about blood sugar levels. Moreover, the glycemic index (GI) of xylitol is much less than it is for sugar
