Course: Sauce based Veg – Mains

Ingredients:
- 300 gram baby spinach, washed and dried in salad spinner
- 3 cloves of garlic, pressed
- ¾ tsp rock salt, more can be added to taste
- ¼ tsp black pepper, finely ground
- 3 tbsp extra virgin olive oil
- 80 gram of grated mozzarella cheese or any other cheese can be used
Method:
- Preheat the oven at 250℃. I use the electric oven which has the fan option.
- Take a shallow oven dish. Add spinach, garlic,salt, pepper and oil. Mix it completely and put it in the oven for 5 minutes.
- Take it out, mix it again and sprinkle cheese on the top.
- Change the setting to grill and when it is heated, keep the tray under the grill for five minutes or until the color of the cheese changes to light brown.
- Take out the dish and enjoy. This dish is enjoyed most when it is piping hot.
Menu suggestion:
- This can be served with Fish, thin cut baked potatoes and salad.
