Course: Sauce based Veg – Mains

Ingredients:
- 1 large swede, cut into 2 cm chuks
- 1 large leak, thinny cut
- 4 tbsp extra virgin olive oil
- 1 tsp of rye/mustard seeds
- 1tsp rock salt, more can be added to taste
- ¼ tsp of haldi/turmeric powder
- 1 large red chili, cut into small round pieces (optional)
- ¼ red chili flakes ( optional)
- ¼ tsp black pepper, finely ground
Method:
- Preheat the oven at 220℃. I use the electric oven which has the fan option.
- Take a shallow oven dish. Add swede, salt, pepper, chili, red chili and 3 tbsp of the oil. Mix it nicely and put it in the oven for 30 minutes or until nearly done tossing occasionally.
- Keep a heavy based pan on medium heat, add remaining oil and as soon as it becomes a little hot, add rye seeds.
- As soon as it starts bubbling, add haldi, pinch of salt, stir it a little and add leeks.
- Stir fry for 2 to 3 minutes until it gets a little soft.
- Mix it with the swede pieces and mix these completely and serve.
- Sprinkle black pepper and serve.
- This is enjoyed most when it is piping hot
