Bhindi ki sabzi is a tasty and indian style okra recipe. This recipe gets ready in 30 minutes.
Ingredients:
- 2 tbsp olive oil or any other oil of your choice
- 1 tsp Jeera (cumin seeds)
- ½ tsp of black rye ( mustard seeds)
- ½ tsp haldi (turmeric powder
- 1 large onion, sliced
- 500 gr bhindi, cut into small pieces
- 1 green or red chili, cut into small pieces ( optional)
- ¼ tsp red chili flakes (optional)/
- 1 tbsp rind of unwaxed lemon, grated or cut into small pieces
- 1 tsp lemon juice
- ½ tsp of garam masala
- ½ tsp rock salt. More can be added as per your choi
Method:
- Wash and dry Bhindi in advance so that no moisture is left. To avoid any moisture, these should be dried with kitchen paper or kitchen cloth. Once completely dry, then cut into small pieces.
- Keep the pan on medium heat. As soon as it becomes hot, add jeera and rye seeds. As soon as it starts bubbling, add onion and go on stirring until these are light pink.
- Add turmeric and after a few seconds, add bhindi, lemon rind and lemon juice and combine it nicely. The pan can be covered for a couple of minutes. Then leave it uncovered for the next 12 to 15 minutes until the bhindi pieces become soft. Add green and red chili and combine these properly. These should be stirred occasionally so that these do not stick to the pan.
- Add salt just when bhindi is ready.
- Take it out in a bowl and sprinkle garam masala and cover it.
Special Notes:
- Make sure that bhindi is dry before you cut it
- Don’t add any water during the cooking process.
- Add salt towards the end when okra is cooked
- Serve with roti or paratha and enjoy.
