Course: Sauce based Veg – Mains

Ingredients:
- 300g flat beans, trimmed both ends
- ½ tsp rock salt
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 2 tbsp fresh mint leaves
Method:
- Add water in the lower part of the steamer and keep it on high heat. As soon as it starts boiling, reduce the heat to medium and add flat beans. Season with a little salt and steam for 6 minutes or until tender.
- In the meantime, switch on the grill to a high setting. Grill them for 10 minutes, turning them once. Some of these should have turned a little brown.
- Remove the beans from the grill and place them on a serving plate.
- In a small bowl, add olive oil, lemon juice, salt and pepper. Lemon juice will give the dressing a tangy flavor. If required, add more salt as per your liking. Add the dressing to the flat beans so that they are nicely covered.
- Scatter fresh mint leaves over the dish and serve immediately.
