Serves: 4 to 6
Ingredients:
- 3 small cucumbers, cut into ½ ’’ thin rounds
- 1 red pepper, cut into 1 and ½ ’’ thin strips
- 2 cups cherry tomatoes, cut into half
- 5 ounce feta cheese, cut into ½ ’’ cubes
- ⅓ cup red onions, thinly sliced
- ⅓ cup pitted kalamata olives
- ⅓ cup fresh mint leaves, for decoration
For dressings:
- ¼ cup extra-virgin olive oil
- 1 garlic clove, minced
- ½ tsp dried oregano, more for sprinkly
- ¼ tsp Dijon mustard
- 3 tbsp raw organic apple cider vinegar
- ½ tsp sea salt
- ¼ tsp finely ground black pepper
Method:
- In a large bowl, add cucumbers, pepper, cherry tomatoes, feta cheese, onions and kalamata olives and toss them nicely.
- Sprinkle with mint leaves.
- If desired, add dressing and serve or dressing can be served separately and can be added as per taste.
- For the dressing, add all the ingredients in a small bowl and mix it nicely and keep aside.
Special Note:
- Dijon mustard and organic apple cider vinegar gives this salad aromatic flavors. It keeps well if prepared in advance.
