Ingredients:
- 50 g oat flour
- 50 g almond flour
- 50 wholemeal flour
- 1 pinch rock salt
- 2 tsp light brown sugar (optional)
- 2 eggs
- 200 ml milk
- 2 tbsp of ghee or butter for frying
Method:
- Combine oat flour, almond flour, wholemeal flour, salt and sugar in a large sized bowl and keep aside.
- Beat the eggs slightly and add the milk. Use a wire whisk to whisk the wet ingredients together first before slowly folding them into dry ingredients. Mix together until smooth. ( there may be a couple of lumps but that’s okay). Keep the batter aside.
- Pancakes can be made immediately but if kept for half an hour or a little more, these may come out a little softer.
- The batter will be thick and creamy in consistency. If you find the batter too thick and it does not pour off the spoon easily, one or two tablespoons extra milk can be added until reaching the desired consistency.
- Heat a pan, preferably a steel one on a medium/high heat. Once it gets hot, pour ¼ cup or a big serving spoon full of batter onto the pan and spread it into a round shape with the back of the spoon.
- When the underside is golden and bubbles begin to appear on the surface, flip with a spatula (preferably steel) and cook until both sides turn into golder color. Repeat the same process with the remaining batter.
- Serve with agave syrup/honey or lemon & brown sugar or fruit. These can be enjoyed plain also.

- These pancakes are healthy and nutritious and loved by grandkids and in fact these are favorites of the whole family
