Serves: 4 to 6
Ingredients:
- 150 g crushed walnuts
- 1 onion, cut into small pieces
- 1 beef tomato, cut into small pieces
- Few sprigs of parsley, cut coarsely in small pieces
For the Dressing:
- 1 tbsp of pomegranate molasses
- ¼ cup olive oil
- ½ tsp rock salt, more can be added as per taste
- ¼ tsp finely ground black pepper
Method:
- Take a heavy based frying pan and keep on medium heat. Add the walnuts and make sure that these are in a single layer. Stir these continuously for 2 to 3 minutes until the nuts become fragrant. Set the nuts aside to cool.
- Take a medium size bowl, add onion, tomato and parsley and add the nuts and gently fold these.
- In a separate bowl, whisk the pomegranate molasses, olive oil, salt and pepper.
- Dizzle the dressing over the walnut mixture and combine these nicely.
- You can finish with a few grinds of fresh pepper.
