Ingredients:
- 1 small radicchio, finely sliced into small pieces
- 2 firm pears, sliced into thin wedges.
- 1 big orange, cut into small pieces
- 75g walnut pieces
- 8 dates, pitted and finely chopped
For the dressing;
- 2 tbsp of agave syrup or honey
- 4 tbsp olive oil
- 1 tsp Dijon mustard
- Zest of half an orange
- ½ tsp of rock salt, more can be added as per taste
- ¼ tsp of finely ground pepper
- ¼ tsp of finely ground cinnamon
Method:
- Take a medium size bowl and add radicchio, pears, orange pieces, walnut pieces and dates and mix these nicely.
- For making the dressing, take a large bowl, add agave syrup, olive oil, mustard, zest of an orange, salt, pepper and cinnamon and whisk together.
- Add the dressing to the radicchio and fruit mixture and combine it completely.
- Taste and add if more salt is needed.
Special note:
- Deep burgundy colour radicchio goes well with sweet and ripe fruit as an elegant winter salad.
- Persimmons can also be used instead of pears.
