Homemade yogurt is healthy and easy to make. This is my preferred method for perfect thick yogurt every time.
Time: whatever it takes to boil the milk
Ingredients:
- litre organic whole milk
- 1 tbsp yogurt kept from the previous homemade yogurt
METHOD:
- Take a medium heavy based pan and keep it on medium heat. Add the milk to the pan and bring it to a boil.
- Leave the milk to cool down until it becomes lukewarm..
- When the milk becomes lukewarm, it is ready for making the yogurt.
- The milk should be transferred from one pan to the other a couple of times. This process helps in making thicker yogurt. Once this process completes, the milk should be returned to a medium size bowl.
- Add the yogurt to the lukewarm milk and mix it completely.
- Cover the bowl and keep it in a warm place.
- I use a small blanket and a towel to keep the bowl warm and keep it in a warm place. The best place is to keep it in the boiler room.
- Spread the blanket on the shelf or the area where the yogurt is to be kept. The bowl should be kept in the middle of the blanket and then the towel should be wrapped around the bowl. Finally the wrapped bowl of milk should be covered from all the sides with the blanket so that no air can come inside. Some heavy item should be kept on the top so that the bowl is not moved.
- It should not be touched or opened before 7 to 8 hours. The best time is to keep it overnight.
- At this point, the thick yummy yogurt should be ready to eat

- Yogurt is extremely versatile and can be used in countless ways in the kitchen. It can be eaten plain, used as dips, raitas, dessert, for making smoothies or even eaten for breakfast with cereal and fruit
