Serves: 4
Ingredients:
- Butter: ½ cup
- Wheat flour: ½ cup
- Water: 2 cups
- Sugar: ½ cup
Other Ingredients for Making the Dessert:
- All the same, ingredients as detailed above are added with addition to these:
- 3 tbsp of mixed almond, pistachio, and walnut cut into small pieces
- 1 tbsp of mixed raisins and goji berries
- ¼ tsp of cinnamon powder
Method:
- Take a pan and add water and sugar to and keep on a medium fire. Go on stirring so that it does not stick to the base of the pan. Once the sugar is mixed completely and it reaches the boiling point, the fire should be reduced to the lowest heat and kept aside.
- Take a kadai/frying pan and keep it on medium fire.
- Add butter to the kadai and as soon as it melts, add flour and start stirring with a wooden spatula. While stirring heat can be increased to high for a minute or so but better if kept on medium to avoid the mixture getting burnt or becoming dark brown.
- As soon as the mixture changes its color and looks light brown, the heat should be reduced to the lowest point and sugary water should be added slowly. This may take 3 to 5 minutes.
- As soon as the water is added, it should be stirred quickly while the heat is increased to low.
- The reason the mixture needs to be stirred quickly Is that if not stirred quickly, some coagulations can be generated. This mixture will start moving round and round within a few minutes.
- You should go on stirring until the butter starts oozing out from the sides and the whole mixture is going round and round.
- At this point, this should be taken out in a bowl and this can be used as kada prashad.
- In case this is to be used as a dessert, the mixture of nuts, raisins, and cinnamon powder should be added and stirred for another 2 minutes. A few pieces can be left aside for sprinkling on the top before serving.
- Serve immediately.

- It tastes best if eaten while it is still hot
