Red rice is diabetic-friendly. This is based on my own experience.
I am sharing how to cook whole-grain red rice in two different ways. The first option is to make it in a pressure cooker, and the second option is to make it in a pan.
Preparation Time: 5 minutes Cooking time: 50 minutes Total time: 55 minutes
Serves: 4
Ingredients:
- 1 cup red rice
- 2 cups of water
- ¾ tsp of rock salt
- 1 tbsp of ghee or any oil of your choice
Method:
OPTION 1:
- Wash the rice 3 times and soak it overnight in a big bowl of water.
- In the morning, drain the water and add the rice to the pressure cooker.
- Keep the pressure cooker on high heat. Add water, salt, and ghee or oil as preferred. Stir to mix and close the lid with the pressure valve. Let it whistle for at least 5 to 6 times.
- Open the lid when the pressure is released. Check if the rice has become soft and there is no water.
- If there is water, close the pressure cooker again and give 2 or 3 more whistles.
- Repeat the same process, and if ready, fluff it with a fork and transfer it to a shallow platter.
- It is best if eaten when hot.
OPTION 2:
If following the second option, there is no need to soak the water overnight.
- Wash the rice 3 times and add it to the heavy-based pan.
- Keep the pan on high heat; add water, salt, and ghee or oil.
- Mix it and leave it to boil.
- As soon as it starts boiling, bring the heat to the lowest setting cover with the lid and let it boil for 40 to 45 minutes.
- Open the lid after 45 minutes and check if the rice has become soft and there is no water left.
- If there is any water, cover the pan and keep it for another 5 minutes or until the rice has become soft.
- Transfer to a serving plate and fluff it with a fork, decorate with coriander leaves, and serve while hot.
Special note:
- This tastes best when served with rajma, chole, paneer sabj bahar, dal makhni, or any dry vegetable, to name a few.
- If eaten with dry vegetables, homemade yogurt or any yogurt can be eaten with it.
- To make it vegan one can use olive oil instead of ghee.
