Preparation time: 25 minutes Cooking time: 30 minutes Total time: 55 minutes
Serves: 4 to 5 people
Ingredients:
- 1 Butternut squash ( approximately 650g) cut into 1”pieces
- 4 cloves of garlic, cut into thin slices
- 1 and ¼ tsp of sea salt
- ½ tsp black pepper, finely ground
- ½ tsp of turmeric powder
- ½ tsp of red chili flakes (optional)
- 1 and ½ tsp of dry rosemary
- 3 to 4 tbsp of olive oil
Method:
- Preheat the oven at 220℃. I use the electric oven, which has the fan option.
- Take a shallow oven dish. Add butternut squash, garlic, salt, pepper, turmeric powder, chili, rosemary and 3 tbsp of the oil. Mix it nicely and put it in the preheated oven for 30 minutes or until nearly done tossing occasionally.
- Once these are soft to the touch, they can be moved to the grill for 8 to 10 minutes so that they get some brownish marks.
- This is ready to eat as a side with a main meal.
- It is enjoyed most when it is piping hot.
