Ingredients Needed:
- 1 pound parsnip, cut into small cubes
- 200 g leaf spinach, washed and paper towel dried
- ½ teaspoon turmeric powder
- 1 tsp rock salt, more can be added to taste
- ¼ tsp black pepper, finely ground
- 2 tbsp extra virgin olive oil
Method:
- Heat the oven at 200℃. I use the electric oven which has the fan option. Add parsnip pieces in the large shallow dish. Add haldi, salt, pepper and olive oil to the parsnip and toss it nicely. Parsnip pieces should be spread nicely in the dish. Roast the parsnip pieces until the pieces are tender. It may take 20 minutes.
- After 15 minutes, remove it from the oven and keep on the table top.
- Add spinach leaves which are already prepared and toss and turn these nicely. After mixing, place it again in the oven for another 10 minutes. After 10 minutes, the dish will be ready.
Menu suggestion:
- This can be served with Fish, thin cut baked potatoes prepared the same time in the oven and salad.
