Course: Salads
At times, you fancy having salad, but not a cold one. For these times, there is a recipe for a warm one.
Preparation Time: 15 minutes
Cooking Time: 5 minutes
Total Time: 20 minutes
Serves: 4
Ingredients:
- 2 carrots, grated
- 10 red radishes, grated
- ½ unwaxed lemon, grated
- Few strips of raw mango peel, grated (optional)
- ½ can (400g) of chickpeas or kidney beans or frozen soya beans. Any type of beans can be used
- 1 bunch of spring onion, cut into small rounds
- Few stigs of parsley, cut coarsely
- 3 tbsp of extra virgin olive oil
- ¼ tsp of rock salt
- ¼ tsp of pepper
- 3 tbsp of capers or olive oil or gherkin. Any of these can be used
Method:
- Take a pan and keep on medium heat. As soon as it gets hot, add carrot, radish, lemon and mango peel. Stir it and keep it on the heat for 2 to 3 minutes. Take it out in a salad bowl. Add beans in the same pan and keep on heat for another 2 minutes and mix it with the carrot mixture.
- Add spring onion, parsley, olive, salt, pepper and capers. Mix these nicely.
- Decorate with capers. Warm salad is ready to eat.
