Ingredients:
For crepes:
- 125 g plain flour
- 2 g rock salt
- 250 ml milk
- 3 eggs
- 2 tbsp melted butter
- Some extra butter or oil for frying
For filling:
- 100 gr grated mozzarella cheese (any other cheese of your choice can be used)
- 2 medium size onion, cut into small pieces
- 2 medium size tomato, cut into small pieces
- 1 green chilli, cut into small pieces (optional)
- ½ tsp of red flakes chilli ( optional)
- ¾ tsp of rock salt
- ½ tsp of finely ground pepper
- Few stigs of coriander cut coarsely
Method:
- Take a big bowl, add flour and salt and combine nicely. Keep aside.
- Beat the eggs, whisk them lightly and add to the milk. Add butter and combine these nicely.
- Add half of this mixture to the flour and keep the other half aside.
- Cover it and keep it aside for approximately an hour,
- After one hour, the other half of the milk mixture should also be mixed with the flour mixture. Both of these should be combined properly so that there are no visible lumps. Crepes will come out better if left for an hour,
- Take a heavy based pan preferably steel and keep it on high/medium heat. Once it gets hot, add a few drops of little butter or oil and spread it nicely.
- Take one serving spoon filled with batter and spread it onto the pan and swirl it so that batter evenly covers the bottom. The batter can also be flattened with the back of the spoon. In about a minute or so, when the edges of the crepe start to pull away, flip it over using a steel spatula. Cook for another 30 seconds or until it has changed the colour to little pink and transfer to a plate. Repeat this process and go on stacking the crepes on top of each other until the whole batter is finished. You will get about 12 crepes. Leave these to cool.
- Make the filling by adding cheese, onion, tomato, green chilli, red chilli, salt, pepper and coriander in a bowl. Combine these properly.
- Take one crepe, keep it on a plate. Then take two tablespoons of cheese mixture and spread it on the crepe in the centre and fold it into a round and transfer to a tray. Go on making the rounds of all the crepes until all the crepes are finished. Cut the crepes into half and transfer these in a tray.
- Preheat the oven at 220℃ and keep the tray in the oven for 7 to 8 minutes or until the sides start getting a little brown.
- Enjoy the crepes straight from the oven while these are hot with green mango chutney.
